Hi nj, "Find an alternative to meat as a protein source, while keeping my fiber consumption reasonable." Tried tempeh? Marinate in garlic and soy sauce, then grill it for a few minutes. Delectable AND high in protein. "Find me something that I can chew: something that chews like a steak or chicken breast or pork chop, for when I eat it with rice or pasta. TVP?" I suggest that you check out seitan. It's great in stews and is chewy like chicken...in fact it kinda tastes like it (but then again so does rattlesnake, etc). e_lie |
